Hand sourced from the rolling hills of Tuscany and the green heart of Umbria. The crops grow at high elevations where there are few trees and many wildflowers. The Italian berries are a smaller, higher grade, more complex and fruity in flavour. Chocolate and rich fruity berry notes, dried cherry and juniper coming through. Grape notes are on the palate with a little bit of spice and savouriness. A really nice balance of flavours from the gin and wine elements. We use the grape in the base alcohol, combining a considered blend of grape and grain spirit. The grape spirit fundamentally provides a unique texture to the gin, and when we redistill our base spirit to make gin, we also add Pinot Grigio grape as one of the botanicals to bring about the underlying aroma and flavor of this most popular of wines. You have to be brave to oak-age gin, but this tiny distillery on the island of Hven between Sweden and Denmark has pulled it off well.
